  • 1 cup unsalted butter soft
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 package pistachio pudding mix
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chocolate chips optional

Baking Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  • Beat in the eggs one at a time, then stir in the pistachio pudding mix.
  • In another bowl, combine the flour, baking soda, and salt. Gradually add to the creamed mixture.
  • Fold in chocolate chips, if using.
  • Drop spoonfuls of dough onto a baking sheet.
  • Bake for 10-12 minutes or until golden.
  • Let cool on baking sheets for a few minutes before transferring to a wire rack.

Notes

These cookies are best enjoyed fresh but can be stored in an airtight container for a few days.
