Pudding Cookie Base

  • 1 cup unsalted butter SOFT butter!
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 1 package pistachio pudding mix
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Baking Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, cream together the soft butter, brown sugar, and granulated sugar until smooth.
  • Beat in the eggs, one at a time, then stir in the pistachio pudding mix.
  • Combine the flour, baking soda, and salt in a separate bowl, then gradually blend them into the creamed mixture.
  • Drop by rounded tablespoons onto ungreased baking sheets.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Let cool on baking sheets for a few minutes before transferring to wire racks.
