Ingredients
  

Dry Ingredients

  • 2.5 cups all-purpose flour (spooned & leveled)
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt

Wet Ingredients

  • 0.75 cup unsalted butter (softened to room temperature)
  • 1 cup granulated sugar
  • 2 tablespoons granulated sugar
  • 1 large egg (at room temperature)
  • 0.25 cup lemon juice (fresh or bottled, at room temperature)
  • 1 tablespoon lemon zest (packed)
  • 1 teaspoon vanilla extract

For Rolling

  • 3 tablespoons granulated sugar (optional)
  • 1 cup confectioners’ sugar

Instructions

  • Whisk the flour, cornstarch, baking soda, and salt together in a medium bowl. Set aside.
  • In a large bowl, beat the butter and granulated sugar together on medium-high speed until creamed, about 3 minutes. Add the egg, lemon juice, lemon zest, and vanilla extract and beat on high speed until combined.
  • Cover dough tightly and chill in the refrigerator for at least 3 hours and up to 3 days.
  • Remove cookie dough from the refrigerator. Allow to sit at room temperature for about 10 minutes.
  • Preheat oven to 350°F (177°C) and line baking sheets with parchment paper or silicone baking mats.
  • Scoop and roll balls of dough, about 1 tablespoon of dough each, into balls. Roll in granulated sugar, then in confectioners’ sugar. Place on baking sheets.
  • Bake the cookies for 12–13 minutes or until the edges are set and the centers still look soft.
  • Cool cookies for 5 minutes on the baking sheet, then transfer to a cooling rack to cool completely.
  • Cookies stay fresh covered at room temperature for up to 1 week.

Notes

The dough can chill for up to 3 days and baked cookies freeze well up to 3 months.
