Ingredients
  

Main ingredients

  • 1 pkg double chocolate brownie mix Use a good quality mix, like Ghirardelli.
  • ½ cup salted butter Ensure the butter is fully melted for a smooth dough.
  • 1 large egg Room temperature is preferred.
  • ½ cup bittersweet chocolate baking chunks Add for molten pockets of chocolate.
  • ½ cup chopped toasted walnuts Optional, but adds a nice crunch.

Preparation

  • Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large bowl, mix the brownie mix, melted butter, and egg with an electric mixer on medium speed until just combined, about 1 minute.
  • Stir in chocolate baking chunks and walnuts gently, using a spatula to prevent breaking the chunks.
  • Using a 1 ½-inch cookie scoop, scoop portions of dough and place them 1 ½ inches apart on the prepared baking sheets.
  • Freeze the scooped dough for about 15 minutes until firm.

Baking

  • Bake the cookies in the preheated oven for 10 to 11 minutes until edges are set and centers look shiny and soft.
  • Let the cookies cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

Notes

For a different twist, use dried cherries and dark chocolate chips, or fold in white chocolate chips or chopped peppermint candies during the holidays. Store cooled cookies in an airtight container for up to four days.
