Meatloaf Ingredients

  • 2 lbs ground beef
  • 1 cup plain bread crumbs
  • ½ cup milk
  • 2 eggs
  • 1 cup onions, diced
  • 1 cup bell pepper, diced
  • 1 jalapeño, diced
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon all-purpose seasoning (Tony's brand)
  • 2 tablespoon Worcestershire sauce
  • ¼ teaspoon salt and pepper
  • 1 cup cheddar and Monterey jack cheese

Bourbon Glaze Ingredients

  • 1 cup apricot jam
  • ¼ cup dark brown sugar
  • 1 tablespoon sriracha
  • ½ cup bourbon
  • ½ cup bbq sauce
  • ¼ cup water

Instructions
 

Meatloaf Preparation

  • In a mixing bowl, combine the ground beef, bread crumbs, eggs, bell pepper, jalapeño, onions, onion powder, garlic powder, all-purpose seasoning, milk, Worcestershire sauce, salt, and pepper. Mix them together.
  • Preheat the oven to 350°F (175°C).

Bourbon Sauce Preparation

  • In a pot, add the apricot jam, dark brown sugar, sriracha, bourbon, barbecue sauce, and water. Cook on low heat, stirring until smooth and bring to a boil.

Meatloaf Assembly

  • On a tray lined with foil, shape half of the meat mixture into a loaf. Fill the center with cheese and top with the remaining meat mixture, forming a mountain shape.
  • Spread a layer of bourbon glaze over the meatloaf, then bake uncovered for about 60 minutes, or until the internal temperature reaches 155°F. Baste halfway through cooking with additional glaze.
  • If the meatloaf is not fully cooked after 60 minutes, cover with foil and bake for an additional 15 minutes.
  • Allow the meatloaf to rest for 30 minutes before slicing.
