Ingredients
  

  • 2 Tbsp. extra-virgin olive oil plus more for drizzling
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, finely chopped
  • 2 Tbsp. tomato paste
  • 1 lb. ground beef
  • 1.5 cups cooked white or brown rice
  • 1 14.5-oz. can diced tomatoes
  • 1.5 tsp. dried oregano
  • to taste kosher salt
  • to taste freshly ground black pepper
  • 6 pieces bell peppers, tops and cores removed
  • 1 cup shredded Monterey jack
  • for serving chopped fresh parsley

Instructions
 

  • Preheat the oven to 400°F (200°C). In a large skillet over medium heat, heat olive oil. Cook the chopped onion for about 7 minutes until softened.
  • Stir in garlic and tomato paste, cooking for another minute until fragrant. Add ground beef and cook, breaking up the meat until it’s no longer pink, about 6 minutes.
  • Stir in the cooked rice and diced tomatoes, season with oregano, salt, and pepper. Let it simmer for about 5 minutes until the liquid has reduced slightly.
  • Arrange the bell peppers cut-side up in a 13" x 9" baking dish and drizzle with olive oil. Spoon the beef mixture into each pepper. Cover the dish with foil.
  • Bake the peppers for about 35 minutes until tender. Uncover, sprinkle with cheese, and continue to bake until the cheese is bubbly, about 10 minutes more.
  • Top with parsley before serving.
