- 2 Tbsp. extra-virgin olive oil plus more for drizzling
- 1 medium yellow onion, chopped
- 3 cloves garlic, finely chopped
- 2 Tbsp. tomato paste
- 1 lb. ground beef
- 1.5 cups cooked white or brown rice
- 1 14.5-oz. can diced tomatoes
- 1.5 tsp. dried oregano
- to taste kosher salt
- to taste freshly ground black pepper
- 6 pieces bell peppers, tops and cores removed
- 1 cup shredded Monterey jack
- for serving chopped fresh parsley
Preheat the oven to 400°F (200°C). In a large skillet over medium heat, heat olive oil. Cook the chopped onion for about 7 minutes until softened.
Stir in garlic and tomato paste, cooking for another minute until fragrant. Add ground beef and cook, breaking up the meat until it’s no longer pink, about 6 minutes.
Stir in the cooked rice and diced tomatoes, season with oregano, salt, and pepper. Let it simmer for about 5 minutes until the liquid has reduced slightly.
Arrange the bell peppers cut-side up in a 13" x 9" baking dish and drizzle with olive oil. Spoon the beef mixture into each pepper. Cover the dish with foil.
Bake the peppers for about 35 minutes until tender. Uncover, sprinkle with cheese, and continue to bake until the cheese is bubbly, about 10 minutes more.
Top with parsley before serving.
