Ingredients
  

Cookie Dough

  • 1 box white cake mix 15.25 ounces
  • 2 large eggs
  • cup vegetable oil
  • 1 teaspoon vanilla extract
  • 4 to 6 drops green gel food coloring adjust for desired shade

Coating

  • ½ cup powdered sugar for rolling
  • Green sprinkles optional

Baking Instructions

  • Preheat your oven to 350°F and line a baking sheet with parchment paper to prevent sticking.
  • In a large mixing bowl, combine the white cake mix, eggs, vegetable oil, and vanilla extract. Stir until a thick dough forms. Add the green gel food coloring and mix thoroughly.
  • Place the dough in the refrigerator for 20 minutes to firm up.
  • Scoop out 1-tablespoon portions of the chilled dough and roll each into a smooth ball.
  • Generously roll each dough ball in powdered sugar to coat completely.
  • Place the coated dough balls 2 inches apart on the prepared baking sheet. Add green sprinkles if desired.
  • Bake in the preheated oven for 10 to 12 minutes until the cookies spread out and develop crinkled tops.
  • Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a brighter holiday look, use emerald green gel food coloring. Add white chocolate chips to the dough for extra sweetness and texture. Store cookies in an airtight container to keep them soft for several days.
