How to Make Spicy Ginger Chicken

  • Marinate the chicken thighs by mixing soy sauce, rice vinegar, and cornstarch in a bowl. Allow the chicken to sit in the marinade for at least 15 minutes.
  • Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Add the marinated chicken and cook until it’s beautifully browned, about 5-7 minutes, then set aside.
  • Sauté the remaining oil in the same skillet and toss in the sliced onion and red bell pepper. Stir-fry until they’re softened and vibrant, about 3-4 minutes.
  • Add the minced garlic and fresh ginger to the mix and cook just until fragrant, about 1 minute. Next, stir in sambal oelek and brown sugar to create a harmonious blend.
  • Pour in chicken broth, fish sauce, and lime juice to deglaze the pan. Bring the mixture to a gentle simmer.
  • Return the browned chicken to the skillet, tossing it to coat thoroughly in the sauce. Simmer for an additional 2-3 minutes.
  • Garnish with chopped green onions right before serving.
  • Serve over fluffy jasmine rice, topping with fresh cilantro if desired.

Notes

Allowing the chicken to marinate for at least 15 minutes enhances flavor. Adjust spice levels by varying sambal oelek quantities. Double sauce ingredients for a richer experience.
