Equipment

  • mixing bowl
  • whisk
  • Oven
  • 9-inch pie dish

Ingredients

  • 3 large eggs
  • 1 cup white sugar
  • 1 cup light or dark corn syrup
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 ½ cups pecan halves
  • 1 9-inch unbaked single crust pie

Instructions

  • Gather all ingredients. Preheat the oven to 400 degrees F (200 degrees C).
  • Beat eggs slightly in a medium bowl. Whisk in sugar, then stir in corn syrup, butter, vanilla, salt, and pecans.
  • Pour filling into unbaked pie shell.
  • Bake in the preheated oven for 15 minutes. Reduce temperature to 350 degrees F (175 degrees C) and continue baking until the pie is golden brown and slightly puffed on top, 35 to 40 minutes. The filling should be set around the edges and slightly jiggly in the center.

Notes

I like to cool the pie for at least 2 hours before slicing so filling sets. You can divide the filling among 18 mini tart shells and bake for 20 to 25 minutes to make mini pecan pies.
