Marinade

  • 2 tablespoon olive oil
  • 3 tablespoon butter melted and cooled
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 3 tablespoon lemon juice
  • 1 tablespoon honey

Skewers

  • 1 lb jumbo shrimp peeled and deveined
  • 2 ½ cups pineapple chunks
  • 1 yellow bell pepper 1-inch pieces
  • 1 red bell pepper 1-inch pieces
  • 2 tablespoon olive oil for brushing grill
  • ½ teaspoon sea salt
  • ½ teaspoon freshly ground pepper
  • ¼ teaspoon red pepper flakes

  • Whisk together the soy sauce, olive oil, melted butter, minced garlic, grated ginger, lemon juice, and honey in a bowl to create a cohesive marinade. Prepare all vegetables: cut the pineapple into chunks, slice the bell peppers, and pat the shrimp dry.
  • Place the shrimp in the marinade and toss gently. Let marinate for 15-20 minutes at room temperature.
  • Remove the shrimp from the marinade (reserve excess for basting) and season with salt, pepper, and red pepper flakes. Thread the shrimp, pineapple, and peppers onto skewers.
  • Preheat grill to 350-400°F. Lightly brush grill grates with olive oil to prevent sticking.
  • Place skewers on the hot grill and cook for 2-3 minutes without moving. Flip and cook for another 2-3 minutes, basting with reserved marinade during the final minute.
  • Transfer skewers to a platter and let rest for 2-3 minutes before serving.
