Ingredients
  

Meat

  • 1 ½ to 2 pounds beef tenderloin

Bacon

  • 8 –10 slices thick-cut beef bacon

Seasonings

  • ¼ cup brown sugar packed
  • 1 tablespoon Dijon mustard or honey mustard
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • a pinch cayenne optional for mild heat

Cooking Steps

  • Preheat your oven to 375°F (190°C).
  • Line a baking sheet with foil and place a wire rack on top.
  • Pat the beef tenderloin dry using paper towels.
  • Rub the beef generously with olive oil, garlic powder, smoked paprika, black pepper, and salt.
  • On a cutting board, lay out the beef bacon slices slightly overlapping. Place the seasoned tenderloin at one end and roll it tightly.
  • In a small bowl, whisk together the brown sugar and Dijon mustard until smooth.
  • Place the bacon-wrapped tenderloin seam-side down on the prepared rack. Brush half of the brown sugar glaze over the bacon.
  • Roast in the preheated oven for about 25 minutes.
  • After 25 minutes, brush on the remaining glaze.
  • Roast for an additional 10–15 minutes until the internal temperature reaches 145°F (63°C).
  • For an extra crispy finish, switch the oven to broil for 1–2 minutes.
  • Once cooked, let the beef rest for 5 minutes.
  • Carefully slice the beef tenderloin against the grain and serve it warm.
