Ingredients
  

  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup sourdough discard
  • 1 cup water
  • ½ cup butter melted
  • ¼ cup honey
  • ½ cup butter softened for filling
  • 1 cup brown sugar for filling
  • 2 tablespoons cinnamon for filling
  • 6 ounces cream cheese for topping
  • ½ cup heavy cream for topping
  • ½ cup honey or maple syrup for topping
  • 2 teaspoons vanilla extract for topping

Instructions
 

  • Melt butter and set aside to cool.
  • Preheat the oven to 375 degrees Fahrenheit, then prepare your baking dish by lightly brushing it with butter or oil.
  • In a large bowl, add the dry ingredients: all-purpose flour, baking soda, baking powder, and salt. Combine.
  • Add the wet ingredients: sourdough discard, water, melted (and cooled) butter, and honey.
  • Mix until a ball forms, which may take about three to five minutes.
  • Place the dough onto a lightly floured surface, and roll it into a rectangle shape about ¼ inch thick.
  • In a small bowl, mix the softened butter, brown sugar, and cinnamon until combined.
  • Spread the filling evenly over the top of the dough with a spatula.
  • Starting at the long side, roll the dough up tightly and press the edge closed.
  • Slice evenly into rolls, aiming for around 12 rolls.
  • Place the rolls into the prepared skillet or dish, spaced slightly apart.
  • Bake in the preheated oven for 25-35 minutes until golden brown and cooked through.
  • Let the rolls cool before frosting to prevent the frosting from sliding off.
  • For the frosting, heat cream cheese, heavy cream, honey (or maple syrup), and vanilla extract in a saucepan until combined.
  • Pour the frosting over the warm cinnamon rolls and serve.

Notes

Aim for consistency when cutting the rolls for even baking. When rolling, a bench scraper can help if the dough sticks. For more layers, roll the dough thinner.
