Sweet Potato Filling

  • 3 pounds sweet potatoes (about 4 medium)
  • 4 tablespoons unsalted butter melted
  • ½ cup milk of choice
  • ¼ cup maple syrup
  • ½ teaspoon vanilla extract
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon fine salt

Pecan Topping

  • 3 tablespoons unsalted butter softened
  • ¼ cup coconut sugar packed or dark brown sugar
  • ¾ cup pecan halves or pieces, finely chopped
  • 2 teaspoons fresh rosemary leaves finely snipped (optional)
  • ½ teaspoon ground cinnamon
  • a pinch fine salt

  • Preheat the oven to 425 degrees Fahrenheit. Line a large, rimmed baking sheet with parchment paper to catch the sweet potato drippings. Grease a 9-inch square baker with butter or cooking spray.
  • Prick each sweet potato with a fork about 5 times so steam can escape. Bake until they yield easily to a gentle squeeze, 45 minutes to 1 hour 15 minutes, then cool.
  • Reduce the oven temperature to 350 degrees. Slice each potato in half and scoop the insides into a large mixing bowl, discarding the skins.
  • Add melted butter, milk, maple syrup, vanilla, nutmeg, and salt to the bowl. Whip until smooth and creamy. Scoop into the prepared baker.
  • In a medium bowl, combine softened butter, sugar, pecans, optional rosemary, cinnamon, and salt. Stir until evenly incorporated, then dollop over the sweet potato filling.
  • Bake for 30 minutes until pecans are golden, and filling is warmed through. Serve. Leftovers keep well in the refrigerator for 4 to 5 days.
