Balsamic Vinaigrette Dressing Ingredients
- ⅓ cup extra virgin olive oil
- 3 tablespoon balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 clove garlic grated or minced
- ¼ teaspoon fine sea salt
- ⅛ teaspoon black pepper freshly ground
Pear Salad Ingredients
- ½ small red onion thinly sliced
- 5 oz arugula
- 3 pieces pears any variety
- 4 to 5 oz goat cheese
- 1 cup dried cranberries
- ½ cup pecans toasted and cooled
Preparation Instructions
(Optional) Soak the onions in ice water for 10 minutes. Drain and pat dry.
In a mason jar, combine all the salad ingredients and shake until well combined.
In a large shallow salad serving bowl, add arugula greens. Top with pears and onions.
Sprinkle on goat cheese, cranberries, and nuts.
Shake the dressing again if separated and drizzle over the salad just before serving.
