  • 1 sheet puff pastry or flatbread

Toppings

  • 2 pcs pears, thinly sliced Use firm but ripe pears like Bartlett or Bosc.
  • 4 oz Gorgonzola cheese, crumbled Can substitute with goat cheese or blue cheese.
  • ¼ cup honey
  • ¼ cup chopped walnuts Can substitute with pecans for variation.
  • 1 handful arugula leaves
  • 1 tablespoon olive oil
  • freshly cracked black pepper

Preparation

  • Preheat your oven to 400°F (200°C) to ensure it reaches the correct temperature for baking the flatbread perfectly.
  • Lightly flour your work surface and roll out the puff pastry sheet. If you’re using pre-made flatbread instead, simply place it directly onto a baking sheet to prepare for toppings.
  • Evenly drizzle 1 tablespoon of olive oil over the surface of the puff pastry or flatbread to help crisp the base and add flavor.
  • Thinly slice the pears and arrange them in overlapping layers, covering the entire base with these juicy slices for balanced sweetness.
  • Crumble 4 oz of Gorgonzola cheese evenly over the pears to add a rich, tangy flavor that complements the fruit.
  • Place the prepared flatbread in the preheated oven and bake for 15-20 minutes, or until the pastry is golden brown and crispy and the cheese is slightly melted.
  • Once baked, remove the flatbread from the oven and immediately drizzle ¼ cup of honey over it, then sprinkle the chopped walnuts, fresh arugula leaves, and freshly cracked black pepper on top to finish the dish with texture and a peppery kick.

Notes

For a nut-free version, omit the walnuts or substitute with seeds like pumpkin or sunflower seeds. Consider adding a sprinkle of fresh thyme or rosemary before baking for an herbal note.
