Ingredients
  

Carrots

  • 8-10 carrots carrots peeled, cut in half or quarters if large carrots (bigger than ¾ inch)
  • 2 tablespoon butter melted
  • 2 teaspoon garlic minced
  • 4 tablespoon Parmesan Cheese
  • 1 teaspoon chopped parsley

Instructions
 

Cooking Instructions

  • Preheat oven to 400 degrees F.
  • Mix melted butter and garlic together.
  • Place carrots on a parchment paper lined baking sheet.
  • Drizzle with butter/garlic mixture.
  • Roast in oven for 20 minutes or until fork tender.
  • Shake pan occasionally to rotate carrots.
  • Top with cheese and roast for another 10 minutes or until carrots reach desired doneness.
  • Top with parsley and serve immediately.

Notes

Use carrots that are similar in size for even roasting. You can wash and scrub them and leave the skin on if preferred.
