Walnut basil Pesto
- 1 cups fresh basil leaves
- 1-2 cloves garlic
- ¼ cup walnuts toasted
- ½ cup grated cheese
- ¼ cup extra virgin olive oil
- 1 tablespoon lemon juice
- Salt to taste
- Pepper to taste
To serve
- 6 green olives pitted
- 6 mini mozzarella balls drained
- 6 sun-dried tomatoes in oil
- 6-8 mini breadsticks
- basil leaves to serve
Method
Toast walnuts in a dry skillet over medium low, tossing frequently.
Place basil, garlic, walnuts, cheese, salt and pepper in a food processor.
Process until fully combined, add lemon juice.
With the food processor running, slowly stream in olive oil.
Pulse until smooth pesto.
In a long thin appetizer cup, add one tablespoon Walnut basil Pesto followed by mozzarella ball, olive, sun-dried tomato and mini breadstick. Drizzle with some olive oil, top with basil leaves and serve!
