Ingredients
  

Walnut basil Pesto

  • 1 cups fresh basil leaves
  • 1-2 cloves garlic
  • ¼ cup walnuts toasted
  • ½ cup grated cheese
  • ¼ cup extra virgin olive oil
  • 1 tablespoon lemon juice
  • Salt to taste
  • Pepper to taste

To serve

  • 6 green olives pitted
  • 6 mini mozzarella balls drained
  • 6 sun-dried tomatoes in oil
  • 6-8 mini breadsticks
  • basil leaves to serve

Instructions
 

Method

  • Toast walnuts in a dry skillet over medium low, tossing frequently.
  • Place basil, garlic, walnuts, cheese, salt and pepper in a food processor.
  • Process until fully combined, add lemon juice.
  • With the food processor running, slowly stream in olive oil.
  • Pulse until smooth pesto.
  • In a long thin appetizer cup, add one tablespoon Walnut basil Pesto followed by mozzarella ball, olive, sun-dried tomato and mini breadstick. Drizzle with some olive oil, top with basil leaves and serve!
