Ingredients
  

  • 3 tablespoons butter salted
  • 1 tablespoon vegetable oil
  • 2 pounds boneless skinless chicken thighs
  • Salt
  • Pepper

  • 2 cups cooked rice any kind
  • 2 ripe avocados sliced and sprinkled with a bit of salt

  • Crispy fried potatoes
  • Corn or flour tortillas homemade all-butter flour tortillas in the photos

Instructions
 

  • Follow this Mexican Adobo Recipe to prepare a double batch (double the amount of all the ingredients) of adobo. You should have approximately 2 cups of adobo. This takes about 25 minutes.
  • Lay the chicken out on paper towels or a clean kitchen towel. Blot excess moisture from the chicken.
  • Add butter and oil to a 12-inch non-stick skillet over medium heat. When the butter melts, add the chicken in a single layer.
  • Sprinkle the chicken with salt and pepper and cook for 3-4 minutes until the bottom starts to brown. Flip the chicken and let it brown on the other side.
  • Pour the adobo sauce over the chicken and bring to a boil.
  • Cover the pan, turn heat to medium-low, and cook for 20 minutes until the chicken is cooked through.
  • Serve the chicken over rice, topped with sliced avocado and pickled onions, with crispy fried potatoes and tortillas on the side.

Notes

Mexican Adobo is a delicious red-chili based sauce that's thick, rich, spicy, and savory. It can be used as a marinade, sauce, or salsa for various dishes. Store leftovers in a non-reactive air-tight container for up to 3 days or freeze for up to 3 months.
