Ingredients
  

For the Quinoa

  • 1 cup Quinoa Rinsed and cooked to yield 3 cups

For the Veggies

  • 2 small Persian Cucumbers Thinly sliced
  • 1 cup Cherry Tomatoes Halved
  • 1 large Avocado Diced just before serving
  • ½ cup Pickled Red Onions Freshly pickled or store-bought
  • ¼ cup Fresh Mint and/or Parsley For garnish
  • 1 teaspoon Aleppo Pepper Optional

For the Chickpeas

  • 1.5 cups Chickpeas Cooked, drained, and dried
  • 2 tablespoon Extra-Virgin Olive Oil For drizzling
  • 1 teaspoon Smoked Paprika For seasoning
  • 1 teaspoon Ground Cumin For seasoning
  • 1 teaspoon Sea Salt For seasoning
  • 1 pinch Cayenne Pepper For seasoning

For the Sauce

  • 1 cup Garlic Yogurt Sauce Or substitute tahini or hummus for vegan option

Preparation Steps

  • Rinse 1 cup of quinoa under cold running water, then cook it according to standard methods.
  • Preheat your oven to 425°F for roasting the chickpeas.
  • On a lined baking sheet, toss 1½ cups of drained, dried chickpeas with olive oil and spices.
  • Roast the chickpeas for 20-30 minutes until golden brown and crispy.
  • While chickpeas are roasting, slice Persian cucumbers and halve the cherry tomatoes.
  • In a bowl or meal prep container, layer cooked quinoa, roasted chickpeas, cucumbers, cherry tomatoes, and avocado.
  • Top with pickled red onions, fresh herbs, Aleppo pepper, and drizzle with garlic yogurt sauce.

Notes

Store garlic yogurt sauce separately to maintain freshness when meal prepping.
