Preparation

  • Preheat your oven to 400°F (200°C). Prepare your brown or wild rice according to package instructions.
  • Wash and peel the sweet potatoes, then cube them evenly. Halve or quarter the Brussels sprouts and toss with olive oil, salt, pepper, and optional spices.
  • Spread seasoned vegetables on a baking sheet in a single layer and roast for about 25–30 minutes until golden brown.
  • In a small bowl, whisk together pure maple syrup and Dijon mustard. Season chicken breasts with salt and pepper.
  • Heat remaining olive oil in a skillet over medium-high heat and sear chicken for 5–6 minutes on each side. Brush on glaze during the last 2 minutes.
  • Transfer the chicken to a plate and let it rest for about 5 minutes for juicy results.
  • Layer your cooked rice, roasted sweet potatoes, and Brussels sprouts in bowls. Top with sliced chicken and any leftover glaze.

Notes

For best results, pound chicken for even cooking, use quality maple syrup, and allow resting time after cooking.
