Ingredients
  

Butter and Seasoning

  • 2 tablespoons butter, softened
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice or to taste
  • 2 cloves garlic, minced
  • 1 tablespoon chopped parsley
  • 1 teaspoon thyme
  • teaspoon paprika
  • teaspoon dill
  • teaspoon salt

Cod Fillets

  • 2 8-ounce cod fillets
  • 1 lemon, sliced

Cooking Steps

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Mix butter, olive oil, lemon juice, garlic, parsley, thyme, paprika, dill, and salt together in a small bowl to make herb butter.
  • Spread a small amount (1 to 2 teaspoons) herb butter in the bottom of a small baking dish, and place cod fillets on top. Top each fillet with about 1 tablespoon herb butter. Place lemon slices around cod.
  • Bake in the preheated oven until cod flakes easily with a fork, about 20 minutes.

Notes

Serve the cod over mashed baby gold potatoes and a bed of lightly wilted spinach for a complete meal.
