Ingredients
  

  • 1 ½ tablespoons olive oil
  • 1 ¼ pounds boneless, skinless chicken breasts cut into bite-size pieces
  • 1 ½ teaspoons minced garlic
  • 1 ½ cups cherry tomatoes halved
  • 1 tablespoon tomato paste
  • cup chopped fresh basil
  • 2 tablespoons chopped fresh parsley
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ¾ cup basil pesto
  • 3 medium zucchini spiralized and lightly patted dry (about 5 cups)
  • ½ lemon Juice of ½ lemon

Instructions
 

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the chicken pieces and cook for 8 to 10 minutes, stirring occasionally, until lightly golden and cooked through. Transfer to a plate.
  • In the same skillet, cook the minced garlic for about 1 minute until fragrant.
  • Stir in the tomato paste and cook for another minute.
  • Add cherry tomatoes, salt, pepper, and oregano. Cook for 4 to 6 minutes until softened.
  • Reduce heat to medium, stir in pesto, and return chicken to the skillet.
  • Add zucchini noodles and toss gently. Cook for 2 to 3 minutes until just tender.
  • Turn off heat and squeeze lemon juice over the dish.
  • Sprinkle with basil and parsley, then serve.

Notes

Pat zucchini dry to prevent excess moisture. Do not overcook zucchini to keep texture firm. Adjust herbs and seasoning to taste.
