Ingredients
  

Pasta

  • 22 pieces jumbo pasta shells I always use Barilla for their durability during stuffing

Filling

  • 1 ¼ cups ricotta drained if watery for a thicker filling
  • ¾ cup chicken finely shredded or diced into ¼-inch pieces
  • 4 oz goat cheese
  • ½ cup Parmesan freshly grated for better melting and saltiness
  • 1 piece egg
  • 2 tablespoon fresh basil
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • ¾ teaspoon Italian seasoning
  • ¼ teaspoon pepper
  • 4 oz mozzarella

Sauce

  • 7 oz sun-dried tomatoes preferably in oil for better flavor and texture
  • 1 small onion diced
  • 28 oz marinara
  • ¼ cup water
  • ¼ teaspoon red pepper
  • 1 cup whipping cream for rich velvety texture
  • ½ teaspoon dried oregano

Topping

  • 4 oz mozzarella

Preparation

  • Mince the garlic cloves and chop the fresh basil. In a large bowl, combine ricotta, shredded chicken, goat cheese, Parmesan, egg, minced garlic, basil, salt, Italian seasoning, pepper, and mozzarella. Mix until well combined and set aside.
  • Preheat your oven to 375°F. Bring a large pot of salted water to a rolling boil and add jumbo pasta shells. Cook for 8-10 minutes until al dente. Drain and rinse with cold water to stop cooking. Lay out to dry.
  • Dice the onion and chop the sun-dried tomatoes. Heat oil from the sun-dried tomato jar in a saucepan. Add diced onion and cook until softened. Add sun-dried tomatoes and cook for 3 minutes. Pour in marinara, water, oregano, and red pepper. Stir and simmer for 15 minutes.
  • Pipe the filling into each cooked shell. Spread half of the sun-dried tomato sauce in a baking dish. Arrange the stuffed shells seam-side up and pour the remaining sauce over them, ensuring they are well covered.
  • Stir the whipping cream into the sauce in the dish. Cover with foil and bake at 375°F for 30-35 minutes until heated through. Remove foil and top with remaining mozzarella.
  • Broil for 2-4 minutes until the mozzarella is melted and browned. Let rest for 2-3 minutes before serving. Garnish with fresh basil if desired.

Notes

Garnish with fresh basil if desired and serve immediately while the shells are warm and the sauce is creamy.
