Ingredients
  

Wet Ingredients

  • 3 large ripe bananas, mashed
  • ½ cup creamy peanut butter use wild friends brand for best results
  • 2 eggs or use 2 flax eggs
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 1 ¼ cups gluten-free oat flour
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon

Instructions

  • Preheat oven to 425 degrees and line a muffin tray with 9 liners.
  • In a large bowl, whisk together banana, peanut butter, eggs and vanilla extract until well combined.
  • Mix in flour, baking powder and cinnamon until smooth.
  • Spoon batter into muffin tray and fill each about 90% full.
  • Bake in oven at 425 for 5 minutes then lower heat to 350 degrees and bake another 10 minutes or so.
  • Allow the muffins to cool for a few then enjoy!

Notes

You can also add in some chocolate chips or blueberries or anything else you may be craving now!
