Ingredients
  

Dry ingredients

  • 1.75 cups all purpose flour or sub white whole wheat flour or gluten-free all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon cinnamon
  • 0.5 teaspoon kosher salt

Wet ingredients

  • 1 cup plain Greek yogurt whole-milk or 2% is best
  • 0.5 cups pure maple syrup
  • 0.33 cups extra virgin olive oil or sub avocado oil or melted coconut oil
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon almond extract optional

Blueberries

  • 1.5 cups fresh blueberries
  • 1 tablespoon all-purpose flour for tossing blueberries
  • 1 tablespoon granulated sugar optional, for sprinkling on top

Instructions
 

Preparation

  • Preheat oven to 425°F. Line a muffin tin with 10 muffin liners and spray with nonstick cooking spray.
  • In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  • In another bowl, whisk the Greek yogurt, maple syrup, olive oil, eggs, vanilla, and almond extract until smooth. Add the dry ingredients and stir until combined.
  • Toss blueberries with 1 tablespoon of flour, then fold gently into the batter.
  • Divide the batter among muffin liners. Sprinkle with sugar if desired. Bake at 425°F for 7 minutes, then reduce heat to 350°F and bake for an additional 10-14 minutes.
  • Let cool slightly, then serve.

Notes

For lemon blueberry muffins, add 1 tablespoon of lemon zest to the wet ingredients. For extra-tall muffins, only fill every other cup and bake in batches.
