Ingredients
  

  • 1 cup peanut butter at room temperature
  • 2 large eggs
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • cup chocolate chips can substitute dark chocolate

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Line or grease a muffin tin.
  • Mix peanut butter and eggs until smooth.
  • Add sugar and vanilla and mix well.
  • Stir in baking soda evenly.
  • Fold in chocolate chips.
  • Fill muffin cups ¾ full.
  • Bake for 12–15 minutes.
  • Cool for 10 minutes.
  • Serve and enjoy.

Notes

Make sure the peanut butter is at room temperature for easier mixing. Store leftovers in an airtight container for up to a week.
