Ingredients
  

  • 2 tablespoon olive oil
  • 400 g beef mince 400g/14oz
  • 1 onion, diced
  • 2 garlic cloves, chopped
  • 100 g carrot, grated 100g/3½oz
  • 2 400g tins chopped tomatoes
  • 400 ml stock made from stock cube, ideally beef
  • 400 g dried spaghetti 400g/14oz
  • salt and pepper to taste

Method

  • Heat a large saucepan over medium heat. Add a tablespoon of olive oil and once hot, add the beef mince and a pinch of salt and pepper. Cook until browned.
  • Transfer the browned mince to a bowl and set aside. In the same pan, add another tablespoon of olive oil, turn to medium heat, add onions with a pinch of salt, and fry for 5-6 minutes.
  • Add garlic and cook for another 2 minutes. Add grated carrot, then return the mince along with any juices back to the pan.
  • Add the chopped tomatoes, stir well, and pour in the stock. Bring to a simmer and reduce temperature to simmer gently for 45 minutes.
  • When ready, heat water in a large saucepan, add a pinch of salt, and cook spaghetti according to packet instructions. Once cooked, drain and mix with the bolognese sauce.

Notes

This bolognese sauce can be made in advance and frozen for up to 3 months.
