Brittle Ingredients

  • ¾ cup granulated sugar
  • cup light corn syrup
  • cup water
  • cup chopped pecans
  • 1 tablespoon butter
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking soda
  • a pinch sea salt

Cooking Instructions

  • Line a baking sheet or large plate with parchment paper. Measure all ingredients before starting.
  • Combine sugar, corn syrup, and water in a saucepan over medium heat. Stir until dissolved and bubbling.
  • Stop stirring and cook for 6 to 8 minutes until golden brown.
  • Remove from heat and quickly stir in butter, vanilla, and baking soda.
  • Stir in pecans immediately.
  • Pour onto prepared surface and spread thin.
  • Sprinkle with sea salt.
  • Cool for 15 to 20 minutes, then break into pieces.

Notes

Work quickly once the syrup reaches the right color. Store in an airtight container to maintain crispness. Avoid humidity for best texture.
