  • 1 can (15.5 oz) black beans drain and rinse before using
  • 1 can (14.5 oz) diced tomatoes include the juices for a richer broth
  • 1 can (15.25 oz) whole kernel corn drain well
  • 4 cups chicken broth use low-sodium for better control over saltiness

For the Creaminess

  • 2 cups Mexican-blend cheese grate from block for smoother melt
  • 1 cup heavy cream can substitute with evaporated milk

For Serving

  • 1 bag tortilla chips or corn tortillas use chips for convenience or bake tortilla strips
  • 1 bunch cilantro chop for a fresh finish; optional avocado and lime wedges

How to Make Crockpot Chicken Tortilla Soup

  • Assemble the ingredients by placing chicken breasts in the crockpot, sprinkle taco seasoning over the chicken, and layer with green chiles, black beans, diced tomatoes, and corn.
  • Pour chicken broth over the layers and set the crockpot to cook on HIGH for 3-4 hours or LOW for 6-7 hours, until the chicken shreds easily.
  • Shred the chicken and return it to the broth.
  • Mix in the grated cheese and heavy cream until fully combined. Cook on HIGH for an additional 30-60 minutes.
  • Serve with tortilla chips or baked tortilla strips and garnish with cilantro and avocado if desired.

Notes

Store leftovers in airtight containers for up to 4 days. Can freeze for up to 3 months. Reheat on stovetop or microwave, adding broth if needed.
