Crispy Chicken Caesar Sandwiches

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • kosher salt and pepper
  • 2 large eggs lightly beaten
  • 1.5 cups seasoned breadcrumbs
  • cup finely grated parmesan cheese
  • 5 to 6 tablespoons olive oil
  • 4 to 6 brioche buns

caesar salad

  • 4 garlic cloves minced
  • 3 tablespoons greek yogurt
  • 2 tablespoons parmesan cheese
  • 1 tablespoon dijon mustard
  • 2 teaspoons red wine vinegar
  • 1 teaspoon anchovy paste
  • ½ lemon juiced
  • kosher salt and pepper
  • cup olive oil
  • 10 to 12 cups chopped romaine lettuce
  • kosher salt and pepper
  • cup finely grated parmesan cheese
  • cup shaved parmesan cheese

Instructions
 

Preparation

  • Thinly slice the chicken breasts lengthwise to make thin chicken cutlets, about 3 to 5 slices per breast. Season with salt and pepper. Line a baking sheet with paper towels.
  • Place eggs in a shallow bowl. In another bowl, combine breadcrumbs and parmesan.
  • Heat 1 to 2 tablespoons of olive oil in a skillet over medium heat for 5 minutes.
  • Dip each chicken piece into egg, then breadcrumbs, pressing gently to adhere.
  • Cook chicken in batches for 3 to 4 minutes per side until deeply golden. Check temperature for 165°F. Place cooked chicken on paper towel-lined sheet.
  • For the dressing, blend garlic, yogurt, parmesan, mustard, vinegar, anchovy paste, lemon juice, salt and pepper in a food processor. Slowly add olive oil to form a creamy dressing.
  • Toss chopped romaine with salt and pepper, add a few tablespoons of dressing, and toss with both finely grated and shaved parmesan.
  • Assemble sandwiches with chicken cutlet(s) and topped with caesar salad. Serve with extra salad if desired.

Notes

The dressing can be made ahead and stored in the fridge for 3 to 4 days.
