  • 2 pounds sweet potatoes (about 2 medium-large or 3 medium)

Seasonings

  • 1 tablespoon cornstarch
  • ½ teaspoon fine sea salt
  • 2 tablespoons extra-virgin olive oil
  • freshly ground black pepper optional
  • cayenne pepper optional
  • garlic powder optional

Preparation

  • Preheat the oven to 425°F with racks in the lower and upper thirds. Line two baking sheets with parchment paper.
  • Peel the sweet potatoes and cut them into fry-shaped pieces about ¼" wide and thick. Transfer half to one baking sheet, and the rest to the other.
  • Sprinkle the fries with cornstarch and salt, tossing to coat. Drizzle with olive oil and ensure they are evenly coated.
  • Arrange fries in a single layer. Bake for 20 minutes, then flip them with a metal spatula.
  • Rearrange the fries in even layers and swap the baking sheets' positions. Bake for an additional 10 to 18 minutes until crispy.
  • Toss with optional seasonings if desired and serve warm.

Notes

These fries are best served fresh and can keep in the fridge for up to 4 days. Reheat in an oven for crispness. You can prepare the sweet potatoes up to 2 days in advance, soaking them in water to prevent browning.
