Ingredients
  

Chicken

  • 2 lb boneless, skinless chicken breasts halved lengthwise
  • ¾ teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoon olive oil
  • 2 tablespoon butter
  • 2 tablespoon all-purpose flour
  • 1 cup chicken broth
  • ½ cup white wine
  • 3 tablespoon Dijon mustard
  • 1 tablespoon chopped fresh rosemary

Parmesan-Roasted Broccoli and Tomatoes

  • 2 (12-oz) pkg broccoli florets
  • 1 pint grape tomatoes
  • 3 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon crushed red pepper
  • ½ cup freshly shredded Parmesan cheese

Instructions
 

Chicken Preparation

  • Sprinkle chicken with salt and pepper. Cook, in batches, in hot oil in a large nonstick skillet over medium-high heat 2 to 3 minutes per side or until browned. Remove from skillet, and keep warm.
  • Melt butter in skillet over medium heat; whisk in flour, and cook 1 to 2 minutes or until browned. Stir in broth, wine, mustard, and rosemary. Return chicken to skillet. Simmer 5 minutes or until chicken is done and sauce is thickened.

Parmesan-Roasted Broccoli and Tomatoes

  • Preheat oven to 450°F. Toss together broccoli, tomatoes, oil, salt, and pepper on a large rimmed baking sheet.
  • Bake 10 minutes or until almost tender. Sprinkle with cheese; toss. Bake 5 minutes longer or until tender.
