Ingredients
  

  • 1 can (15 ounces) whole kernel corn drained
  • ½ piece red bell pepper finely diced
  • 1 ½ cups shredded cheddar cheese or mild shredded cheese
  • ¾ cup mayonnaise
  • ¼ teaspoon black pepper
  • 1 ½ cups crunchy corn chips lightly crushed
  • 1 tablespoon chopped fresh cilantro optional
  • 1 tablespoon finely diced jalapeño optional

Instructions
 

  • In a large mixing bowl, combine the drained corn, diced red bell pepper, shredded cheese, mayonnaise, and black pepper.
  • Stir everything together until the salad is evenly mixed and creamy.
  • For extra flavor, stir in the jalapeño if using.
  • Just before serving, gently fold in the crushed corn chips so they stay crisp.
  • Top with chopped cilantro if desired, and serve right away.

Notes

Add corn chips just before serving to maintain crunch. Adjust jalapeño to control spice level. Best served fresh for ideal texture.
