For the Cheese Sauce

  • 4 tablespoons Butter Margarine can be used for a dairy-free option.
  • ½ cup Heavy Whipping Cream Swap with milk or half-and-half for a thinner sauce option.
  • 1 teaspoon Mustard Powder Optional if you prefer a simpler flavor profile.
  • 8 ounces Sharp Cheddar Cheese Freshly shredded is best for smooth melting.

Directions

  • Warm up 2 tablespoons of extra virgin olive oil in a large skillet over medium-high heat.
  • Add 4 cups of riced cauliflower and 2 cups of riced broccoli to the skillet. Season with ½ teaspoon of salt and ¼ teaspoon of pepper. Sauté for about 8-9 minutes, until the veggies are just tender and vibrant.
  • Carefully scoop the riced cauliflower and broccoli into a bowl and set aside.
  • In the same skillet, melt 4 tablespoons of butter over medium heat.
  • Once the butter has melted, whisk in ½ cup of heavy whipping cream and 1 teaspoon of mustard powder. Stir for about 2 minutes, until the mixture is well blended and bubbling slightly.
  • Stir in 8 ounces of freshly shredded sharp cheddar cheese. Continue mixing until the cheese has melted into a gooey, creamy sauce.
  • Return the sautéed cauliflower and broccoli to the skillet. Mix everything together thoroughly, cooking for an additional 2-3 minutes until heated through.
  • Serve immediately, or transfer the Cheesy Broccoli Cauliflower Rice to a serving dish.

Notes

Feel free to sprinkle extra cheese on top for an even cheesier experience. Optional: Garnish with fresh herbs or a sprinkle of paprika for an extra pop of flavor.
