Baking Instructions

  • Preheat oven to 400°F.
  • Heat olive oil in large skillet over medium heat then add ground beef, onion and garlic and cook until browned, breaking into small pieces as it browns, approx 7-10 min.
  • Add the cumin, chili powder, paprika, oregano, salt, and black pepper and cook for another 1-2 minutes, stirring often.
  • Stir in the tomatoes and simmer for 7-10 minutes or until the juice has cooked down.
  • Line taco shells along a 9 x 13 inch casserole dish and bake for 5 minutes if using a light colored dish, 3 minutes if using a dark dish.
  • Carefully remove from oven. Sprinkle some of the shredded cheese onto the bottom of each taco shell, followed by the black beans, then top with ground beef mixture.
  • Top with remaining cheese and bake, uncovered, for 7-10 minutes or until cheese is melted.
  • Remove from heat and add desired toppings. Serve tacos hot, straight out of the oven.

Notes

These tacos are best served immediately for a nice crunchy texture. Wrap leftovers in foil and store in the fridge. Reheat in oven for about 8 minutes at 350°F. Taco meat can be made ahead and stored for 2-3 days. Assembled tacos can keep for a few hours in the refrigerator but will soften.
