Ingredients
  

Beef Birria (Birria de Rez)

  • 4 pounds beef chuck roast cut into 3-inch chunks

Birria Sauce

  • 10 count guajillo chiles
  • 5 count ancho chilies
  • 3 count arbol chilies
  • 2 count Roma tomatoes
  • 1 count white onion quartered
  • 6 count garlic cloves unpeeled
  • 2 cups low-sodium beef broth
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon dried Mexican oregano
  • ½ teaspoon ground cloves
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • 3 count bay leaves

Preparation

  • Deseed the chilies. Slice the stems off the chilies and shake out the seeds. Rinse to remove dust.
  • Simmer the chilies. In a medium pot, add the guajillo chilies, ancho chilies, and arbol chilies, cover with water, and simmer for 15 minutes.
  • Roast the veggies. Add tomatoes, onion, and garlic to a quarter sheet pan and broil for 4 to 6 minutes until charred.
  • Make the sauce. Blend chilies, 1 cup of the simmering water, garlic, tomatoes, onion, broth, vinegar, salt, pepper, cumin, oregano, cloves, cinnamon, and ginger until smooth.
  • Slow cook the birria. Place beef in slow cooker, pour sauce on top, add bay leaves, mix, cover, and cook on low for 8 to 9 hours.
  • Shred the meat. Discard bay leaves and shred beef with two forks on a cutting board.
  • Combine the meat and sauce. Mix shredded beef back into sauce in the slow cooker.
  • Serve. Enjoy birria straight from the slow cooker or in bowls garnished with onion, cilantro, and lime juice.

Notes

Store leftovers in an airtight container for 4 to 5 days in the fridge or freeze for up to 3 months. To reheat, thaw in the fridge overnight and microwave until warmed through.
